This tasty, shortcut version of the classic, Quiche Lorraine, makes its own ‘crust’ as it bakes.
12 bacon strips
1 cup shredded Swiss cheese
1/3 cup onion, chopped
1 1/2 cups milk
3 large eggs
3/4 cup biscuit baking mix
1/8 teaspoon ground black pepper
- Cook bacon in a skillet. Crumble into a greased 9-inch pie pan with shredded Swiss cheese and chopped onion.
- In a bowl beat milk, eggs, biscuit baking mix, and pepper with an electric mixer until smooth.
- Pour into the pie pan and bake at 350°F (175°C) for 35 to 40 minutes, or until the center is set. Cool for 5 minutes before cutting.
Makes 8 servings.
